Put chiles and water in a saucepan and bring to a boil. Simmer for 15-20 minutes. Remove chiles and cool under running water. Reserve cooking water. Cut off stem, cut chiles in half and remove seeds under running water. Cut in pieces and place in blender with 1 cup water. Blend well to puree. Strain if desired.&lt;br /&gt;2. In a toaster oven or in a skillet, brown the flour a little.&lt;br /&gt;3. Place oil in saucepan and saute onion. When transparent, add garlic and saute for one minute. Heat to a boil, reduce heat to a low boil and cook for 3 minutes. Whisk frequently to make sure all spices dissolve. This is important for flavor and a nice smooth sauce. While the sauce is on a slow simmer/boil, add 5 tablespoons of cold&lt;br /&gt;water in a small bowl. With another whisk mix 1 tablespoon at a time of flour. Whisk&lt;br /&gt;vigorously to avoid lumps. If you have lumps here, you will definitely have lumps in your sauce.&lt;br /&gt;After 3 minutes of cooking sauce, turn the heat up to high. Very slowly, pour the flour mixture into the boiling sauce. Here you must whisk the sauce vigorously while adding the flour to avoid&lt;br /&gt;lumps.&lt;br /&gt;&lt;br /&gt;After all the flour is added, continue to whisk for one minute. You can turn the heat down to medium during this time. Just make sure the &lt;span style="font-weight: bold;"&gt;enchilada sauce&lt;/span&gt; is boiling. Turn off the heat, this &lt;span style="font-weight: bold;"&gt;enchilada sauce recipe&lt;/span&gt; is done. In separate pan melt shortening until it smokes. In another pan pour enchilada or red chile sauce and water. Use medium heat. Cook until enchilada sauce starts to boil. Monterey Jack cheese, grated&lt;/li&gt;&lt;li&gt;3/4 c. onion, chopped&lt;/li&gt;&lt;li&gt;2 tbsp. flour&lt;/li&gt;&lt;li&gt;1/4 c. butter&lt;/li&gt;&lt;li&gt;2 c. chicken broth&lt;/li&gt;&lt;li&gt;1 c. sour cream&lt;/li&gt;&lt;li&gt;1 (4 oz.) can diced jalapeno peppers&lt;/li&gt;&lt;/ul&gt;&lt;br /&gt;INSTRUCTIONS&lt;br /&gt;Cook tortillas in oil until soft, drain on paper toweling. Place 2 tablespoons grated cheese and 1 tablespoon diced onion on each tortilla and roll up. Place in baking dish. In saucepan, melt&lt;br /&gt;butter; add flour, stir in chicken broth and cook until thickened.&lt;br /&gt;Stir in sour cream and peppers. Pour sauce over enchiladas. (6 oz.) Monterey Jack or Cheddar cheese&lt;/li&gt;&lt;li&gt;3/4 tsp. ground cumin&lt;/li&gt;&lt;li&gt;12 corn tortillas&lt;/li&gt;&lt;li&gt;1/2 c. chopped onions&lt;/li&gt;&lt;li&gt;1 c. picante sauce&lt;/li&gt;&lt;li&gt;Vegetable oil&lt;/li&gt;&lt;/ul&gt;&lt;br /&gt;INSTRUCTIONS&lt;br /&gt;Cook crumbled sausage with onions, drain well. Pour oil to a depth of 1/2 inch into a 6 to 8 inch frying pan over medium-high heat. When oil ripples as pan is tilted, add a tortilla and cook,&lt;br /&gt;turning once, just until it begins to brown (about 5 seconds per side). Lift out and lay flat on paper towels; immediately spoon about 1/2 cup of the filling down center. Roll to enclose.&lt;br /&gt;&lt;br /&gt;Lay tortilla, seam side down, in a 10 x 15 inch rimmed baking pan.&lt;br /&gt;Repeat for remaining tortillas and filling. prepare Tomatillo Sauce.&lt;br /&gt;Cover and refrigerate enchiladas and sauce separately for up to 1 day.&lt;br /&gt;&lt;br /&gt;To serve: Bake &lt;span style="font-weight: bold;"&gt;enchiladas&lt;/span&gt;, covered, in a 350 degree oven until hot (about 30 minutes). Uncover and top with cheese. Continue baking until cheese is melted (about 10 more minutes.) For each serving, spoon about 1/4 cup of the sauce onto a plate. Add 2 enchiladas. Garnish with lettuce, sour cream, lime and cilantro. Makes 6 servings.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Chicken Filling:&lt;/span&gt; Mix 4 cups coarsely shredded cooked chicken, 2 cups (8 ounce) shredded Jack cheese, 1 large can (7 ounce) diced green chilies and 1 1/2 teaspoons dry oregano leaves. Reduce heat and simmer, uncovered for 25 minutes. Season to taste with salt. Whirl mixture in a blender until smooth. Cover and refrigerate for up to 1 day; reheat over low heat. Add juice, and simmer 15 minutes. Pour mixture into a blender and blend until smooth. Salt to taste.&lt;br /&gt;&lt;br /&gt;SAUCE:&lt;br /&gt;&lt;ul&gt;&lt;li&gt;1 1/2 lb. fresh tomatillos or 2 (13 oz.) cans tomatillos&lt;/li&gt;&lt;li&gt;2 green chiles, charred, peeled and seeded&lt;/li&gt;&lt;li&gt;3 jalapeno chiles, partially seeded, veins removed&lt;/li&gt;&lt;li&gt;2 cloves garlic&lt;/li&gt;&lt;li&gt;1/2 c. chicken broth&lt;/li&gt;&lt;li&gt;1/4 c. rice vinegar&lt;/li&gt;&lt;li&gt;1 tbsp. light oil&lt;/li&gt;&lt;li&gt;1 tsp. ground cumin&lt;/li&gt;&lt;li&gt;1/4 to 1/2 c. cilantro, snipped&lt;/li&gt;&lt;li&gt;Salt to taste&lt;/li&gt;&lt;li&gt;2 tbsp. lime juice&lt;/li&gt;&lt;li&gt;1 tsp. sugar&lt;/li&gt;&lt;/ul&gt;&lt;br /&gt;INSTRUCTIONS&lt;br /&gt;After removing dry husks from tomatillos, rinse them well under warm water to remove some of the stickiness. Cut into quarters. Cut chiles and jalapenos into pieces. Add garlic and chop to a coarse puree using the pulse button of the food processor. Place mixture in saucepan and simmer everything except cilantro, 12-15 minutes.&lt;br /&gt;Heat 12 corn tortillas wrapped in foil in 350 degree oven for 10-15 minutes or until hot and softened. Fill each tortilla with some chicken mixture and about 1 tablespoon of sauce. Roll, place seam side down in greased baking dish. Continue using all chicken and tortillas. Pour remaining sauce over enchiladas. Top with additional cheese. Bake at 350 degrees for 20 minutes.&lt;br /&gt;Just before serving, place spoonful of green onion, sour cream sauce over each serving. Preheat oven to 350 degrees F (175 degrees C).&lt;br /&gt; 2. Place chile peppers on a cookie sheet and roast in the oven until slightly toasted. (Note: When you can smell them, they're done.)&lt;br /&gt; 3. Remove from the oven and slit them open. Remove the seeds and veins, then put them in a bowl with boiling water to cover. Allow them to sit for 30 minutes, then remove them from the water, reserving the water. Scrape the pulp from the insides of the chile peppers and discard the skins. (Note: The skins will give the mixture a bitter flavor.) Return the pulp to the water and set aside for later.&lt;br /&gt; 4. In a large saucepan over medium heat, saute the garlic and onion in the butter or margarine for 5 minutes, or until onion is tender. Add the flour and mix well.
